We love adding condiments to our meals for additional flavor. Seriously, you won’t find many meals enjoyed in this house without adding a special topping or sauce. Because we enjoy Mexican cuisine often, it was no surprise we were happy to receive an assortment of Wholly Guacamole products!
Wholly Guacamole prides themselves as a healthy option for dips, salsas, and more. You could replace your unhealthy mayo or salad dressings with the offerings from this company. I didn’t realize they offered so much more than just simple guacamole.
I’m not much of a guac fan, but my husband LOVES it. I did find that I love their salsas though! They taste fresher than most of the ones you get in a jar at the store. It was closer to the homemade salsa my family makes.
With the assortment we received, we have had fun topping our tacos, nachos, and most recently, Mexican Bowls! We had one of these at one of our favorite restaurants a few weeks ago, and decided to start making them at home.
What You Need
Boneless, skinless chicken breasts
1 package, Wholly Guacamole Salsa
Wholly Guacamole or Layered Dip (We used the Taco Bean Layered Dip)
1. Cook chicken breasts in salsa in a slow cooker until meat is done, about 4-5 hours. Shred chicken.
2. In a bowl, layer tortilla chips, rice, and chicken. Top with cheese, lettuce, and dip (or another Wholly Guacamole topping).
That’s really all there is to it! If you plan out this meal (get the slow cooker up and running in the morning), this is a super simple meal that everyone loves. Even our picky three year old enjoys it!
I didn’t add in how much of each ingredient is needed, because we make the bowls to our personal tastes. My husband, for example, adds more Wholly Guacamole, rice, and cheese to his than I do to mine. It’s all about having it your way with these Mexican bowls!
Along with making this Mexican dish, Wholly Guacamole products are great for an appetizer (think chips and dip), side dish, or just as a snack. My husband took the 100 Calorie Minis with him to work with a serving of tortilla chips to have as an afternoon snack. They were filling and are a healthier alternative to other fat-filled dips out there.
